As part of our ongoing tribute to the bounty of our seas, sea urchin holds a special place in our culinary offerings. We present it in various textures: stuffed with a velouté of its coral and a cava reduction, served naturally, and as a key component in the sauce that accompanies our Donostiarra-style spider crab cannelloni.
